Turkish Antep Pistachio is harvested in late of August and early September. Harvesting of Turkish Antep pistachios should be done on time. When it is harvest time, the peel changes from transparent to opaque. The red shell becomes very soft and can be easily separated from the pistachio. If the Turkish Antep pistachio is to be used after a long time, the Turkish pistachio is dried without leaving the outer red shell of the pistachio. In Antep pistachios that have reached maturity, the dry kernel weight and oil amount are at the highest level. The best time to harvest is a two-week period in this period. And they collect pistachios in the most appropriate period.
Harvesting in the right period positively affects the total yield. However, harvest time is not the only thing that affects yield.

One of the most important factors that will increase yield is pruning the tree. If the pistachio tree is pruned by people who are not experts in the business, the development of that tree goes back a few years. It takes 3-4 years for the tree to recover and recover. Correct pruning increases yield, wrong pruning kills the tree. For this reason, pistachio trees should be pruned by their experts every year.
Another factor that will affect efficiency is spraying. The right spraying at the right time removes the harmful insects that may affect the tree and keeps the tree alive.
Turkish Antep Pistachio harvest is generally done in the Southeast of our country at the end of August. It is harvested in mid-August in hot regions. However, since the pistachios are not mature yet in the higher regions, harvesting can be done until mid-September.
